Fish and chips is a beloved classic dish that originated in the United Kingdom. Achieving the perfect crispy batter and tender fish can be challenging, but with the right recipe, you can recreate authentic results at home. This guide will walk you through the steps to make delicious, crispy fish and chips that rival those from traditional fish and chip shops.

Ingredients Needed

  • 4 large cod or haddock fillets
  • 2 cups all-purpose flour
  • 1 cup beer (cold) or sparkling water
  • 1 teaspoon baking powder
  • Salt and pepper to taste
  • 4 large potatoes (Russet or Maris Piper)
  • Vegetable oil for frying

Preparing the Fish

Start by patting the fish fillets dry with paper towels. Season them lightly with salt and pepper. This enhances the flavor and helps the batter stick better.

Making the Batter

In a large bowl, whisk together the flour, baking powder, salt, and pepper. Gradually add the cold beer or sparkling water, stirring gently until the batter is smooth and slightly thickened. Do not overmix; a few lumps are okay. The cold liquid helps create a crispy coating.

Preparing the Potatoes

Peel the potatoes and cut them into thick strips, about 1/2 inch wide. Rinse them in cold water to remove excess starch, then dry thoroughly with a clean towel. This step is crucial for crispy chips.

Frying Process

Heat vegetable oil in a deep fryer or large, heavy-bottomed pot to 350°F (175°C). Dip each fish fillet into the batter, allowing excess to drip off, then carefully place it into the hot oil. Fry until golden brown and cooked through, about 4-5 minutes. Remove and drain on paper towels.

For the chips, fry the potato strips in batches for about 4-6 minutes until golden and crispy. Remove and drain on paper towels. For extra crispiness, you can fry the chips a second time at 375°F (190°C) for 1-2 minutes.

Serving Suggestions

Serve your crispy fish and chips immediately with traditional accompaniments such as tartar sauce, malt vinegar, lemon wedges, and mushy peas. Enjoy your homemade, authentic fish and chips that are crispy on the outside and tender on the inside!
