Eggplant Parmesan is a classic Italian dish loved by many for its rich flavors and comforting texture. Baking this dish instead of frying makes it a healthier option while still delivering delicious results. Fresh basil adds a fragrant, herbal note that enhances the overall flavor.

Ingredients

  • 2 large eggplants, sliced into 1/4-inch rounds
  • 1 cup of marinara sauce
  • 1 ½ cups of shredded mozzarella cheese
  • ½ cup of grated Parmesan cheese
  • 1 cup of fresh basil leaves
  • 1 cup of bread crumbs
  • 2 eggs, beaten
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

Preheat your oven to 400°F (200°C). Lightly brush the eggplant slices with olive oil and season with salt and pepper. Arrange them on a baking sheet and bake for about 20 minutes, flipping halfway through, until golden and tender.

While the eggplant is baking, prepare a breading station with beaten eggs in one bowl and bread crumbs in another. Dip each baked eggplant slice into the egg, then coat with bread crumbs.

Arrange the breaded eggplant slices in a baking dish. Spoon marinara sauce over each slice, then sprinkle with mozzarella and Parmesan cheeses. Add fresh basil leaves on top for flavor and aroma.

Bake the assembled dish for an additional 15-20 minutes until the cheese is bubbly and golden. Garnish with extra basil before serving.

Serving Suggestions

This baked eggplant Parmesan pairs beautifully with a side of spaghetti, a crisp green salad, or crusty Italian bread. It’s perfect for a family dinner or a special occasion.

Benefits of Baking Eggplant Parmesan

Baking instead of frying reduces the amount of oil used, making the dish lighter and healthier. It also allows the flavors of the eggplant, herbs, and cheese to meld beautifully, creating a satisfying and nutritious meal.
