Ingredients

  • 2 large zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • Olive oil spray

Yogurt Dip

  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

Instructions

Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with olive oil.

In a large bowl, combine the grated zucchini and salt. Let it sit for 10 minutes to draw out excess moisture. Then, squeeze out the liquid using a clean kitchen towel.

Add the flour, beaten eggs, Parmesan cheese, minced garlic, and black pepper to the zucchini. Mix until well combined.

Form the mixture into small patties and place them on the prepared baking sheet. Lightly spray the tops with olive oil spray.

Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.

Prepare the Yogurt Dip

While the fritters are baking, mix Greek yogurt, lemon juice, chopped dill, salt, and pepper in a small bowl. Chill until ready to serve.
