Russian beef and onion pirozhki are delicious, savory pastries that are a popular treat in Russian cuisine. Making them at home allows you to enjoy authentic flavors and share a comforting meal with family and friends.

Ingredients Needed

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup warm milk
  • 1/4 cup vegetable oil
  • 1 teaspoon sugar
  • 1 packet active dry yeast (about 2 1/4 teaspoons)
  • 1 pound ground beef
  • 1 large onion, finely chopped
  • Salt and pepper to taste
  • Egg wash (1 beaten egg)

Preparing the Dough

In a small bowl, dissolve the yeast and sugar in warm milk. Let it sit for about 10 minutes until frothy. In a large mixing bowl, combine the flour and salt. Add the yeast mixture and vegetable oil. Knead until the dough is smooth and elastic. Cover with a damp cloth and let it rise in a warm place for about 1 hour.

Making the Filling

While the dough is rising, prepare the filling. In a skillet, cook the ground beef over medium heat until browned. Add the chopped onions and cook until translucent. Season with salt and pepper. Remove from heat and let it cool slightly.

Assembling the Pirozhki

Once the dough has risen, punch it down and divide it into small balls. Roll each ball into a flat circle about 4 inches in diameter. Place a spoonful of the beef and onion filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal.

Place the filled pirozhki on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a shiny finish.

Baking the Pirozhki

Preheat your oven to 375°F (190°C). Bake the pirozhki for 20-25 minutes or until golden brown. Remove from the oven and let cool slightly before serving.

Enjoying Your Homemade Pirozhki

Serve these pirozhki warm as a snack or part of a meal. They pair well with sour cream or a simple salad. Making pirozhki at home is a wonderful way to experience Russian culinary tradition and enjoy a delicious, hearty dish.
