Creamy Mushroom Risotto with Fresh Herbs is a classic Italian dish that combines the earthy flavors of mushrooms with the rich, creamy texture of perfectly cooked arborio rice. It is a comforting and elegant meal suitable for both weeknights and special occasions.
Ingredients
- 1 ½ cups arborio rice
- 4 cups vegetable or chicken broth
- 2 cups fresh mushrooms, sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ cup dry white wine (optional)
- 1 cup grated Parmesan cheese
- 2 tablespoons unsalted butter
- 2 tablespoons olive oil
- Fresh herbs (parsley, thyme, chives), chopped
- Salt and pepper to taste
Preparation Steps
Begin by heating the broth in a saucepan and keeping it warm over low heat. In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
Next, add the sliced mushrooms to the skillet and sauté until they are browned and tender, approximately 5-7 minutes. Stir in the minced garlic and cook for another minute.
Add the arborio rice to the skillet, stirring to coat each grain with the oil and butter. Cook for 1-2 minutes until the rice is slightly translucent around the edges.
If using wine, pour it in now and stir until it is mostly absorbed. Then, begin adding the warm broth, one ladle at a time, stirring constantly. Allow each addition to be absorbed before adding the next. Continue this process until the rice is creamy and al dente, about 20-25 minutes.
Once the rice is cooked, remove the skillet from heat. Stir in the grated Parmesan cheese, remaining tablespoon of butter, and chopped fresh herbs. Season with salt and pepper to taste.
Serving Suggestions
Serve the creamy mushroom risotto hot, garnished with additional herbs and a sprinkle of Parmesan cheese if desired. It pairs beautifully with a light salad or roasted vegetables for a complete meal.
