Ingredients Needed

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 4 egg yolks
  • 1 teaspoon pure vanilla extract
  • Optional: fruit, chocolate, or other flavorings

Step-by-Step Instructions

Prepare the Custard

In a saucepan, combine the milk, cream, and half of the sugar. Heat over medium heat until just simmering, then remove from heat.

Whisk Egg Yolks and Sugar

In a separate bowl, whisk the egg yolks and remaining sugar until well combined and slightly thickened. Slowly pour a small amount of the hot milk mixture into the eggs, whisking constantly to temper the eggs.

Return the egg mixture to the saucepan and cook over low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon. Do not boil.

Chill and Freeze

Pour the custard through a fine sieve into a clean bowl. Stir in the vanilla extract. Cover and refrigerate for at least 4 hours or overnight until thoroughly chilled.

Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions. If you don’t have an ice cream maker, pour the mixture into a freezer-safe container, stirring every 30 minutes until firm.
