Moroccan pastilla is a delicious and intricate dish that combines savory and sweet flavors wrapped in flaky pastry. Making it at home can be a rewarding experience that introduces you to Moroccan culinary traditions. This guide will walk you through the steps to create a perfect Moroccan pastilla.

Ingredients Needed

  • 1 package of phyllo (filo) pastry
  • 2 cups cooked chicken or pigeon meat, shredded
  • 1 large onion, finely chopped
  • 1/2 cup almonds, toasted and chopped
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon saffron threads
  • 1/4 cup powdered sugar
  • 1/2 cup butter, melted
  • Salt and pepper to taste
  • Optional: orange blossom water or rose water

Preparation Steps

Start by preparing the filling. In a skillet, sauté the chopped onion in a little oil until translucent. Add the shredded chicken, spices, and a pinch of salt and pepper. Cook until heated through and fragrant. Remove from heat and stir in toasted almonds and a splash of orange blossom or rose water if desired.

Preheat your oven to 375°F (190°C). Grease a round baking dish or a deep oven-safe skillet. Lay one sheet of phyllo pastry in the dish and brush lightly with melted butter. Repeat layering, brushing each sheet with butter, until you have about 6-8 layers.

Spread the filling evenly over the layered pastry. Cover the filling with additional buttered phyllo sheets, repeating the layering and buttering process. Tuck the edges of the pastry down around the filling to enclose it completely.

Brush the top with more melted butter and score the pastry into serving portions. Bake in the preheated oven for 25-30 minutes, or until golden brown and crisp.

Serving and Tips

Let the pastilla cool slightly before serving. Traditionally, it is dusted with powdered sugar and cinnamon, creating a sweet and savory flavor combination. Serve hot, accompanied by mint tea for an authentic Moroccan experience.

For variations, you can substitute the chicken with seafood or vegetables. Using high-quality ingredients and fresh spices will enhance the flavor of your homemade pastilla.
