Creating a perfect sous vide berry mousse with a biscuit base is a delightful way to impress guests or enjoy a sophisticated dessert at home. The sous vide method ensures a smooth, airy mousse with vibrant berry flavor, while the biscuit base provides a crunchy contrast.

Ingredients Needed

  • 200g mixed berries (strawberries, raspberries, blueberries)
  • 100g sugar
  • 250ml heavy cream
  • 3 egg whites
  • 1 teaspoon lemon juice
  • 200g digestive biscuits or graham crackers
  • 100g unsalted butter, melted
  • Optional: fresh mint leaves for garnish

Preparing the Biscuit Base

Start by crushing the digestive biscuits into fine crumbs. Mix the crumbs with melted butter until well combined. Press this mixture evenly into the bottom of a springform pan to form the base. Chill in the refrigerator for 30 minutes to set.

Making the Berry Mousse

Combine the berries and half of the sugar in a blender and blend until smooth. Strain the mixture to remove seeds for a smoother mousse. In a separate bowl, whip the heavy cream until soft peaks form. In another bowl, beat egg whites with lemon juice until stiff peaks form, gradually adding the remaining sugar.

Gently fold the berry puree into the whipped cream, then carefully fold in the egg whites. Pour this mixture over the chilled biscuit base. Seal the springform pan with plastic wrap and vacuum-seal if using a sous vide bag, or place in a water-tight container.

Cooking Sous Vide

Set your sous vide cooker to 77°C (170°F). Submerge the sealed container or bag in the water bath. Cook for 45 minutes to 1 hour, ensuring the mousse sets evenly. Once done, remove from water and refrigerate for at least 2 hours or until fully chilled.

Serving and Garnishing

Carefully remove the mousse from the springform pan. Slice and serve chilled, garnished with fresh berries or mint leaves for a burst of color and flavor. The result is a silky, refreshing dessert with a perfect balance of sweetness and tartness.

Enjoy your homemade sous vide berry mousse with a biscuit base — a sophisticated treat that showcases the magic of sous vide cooking!
