Soup Joumou is a beloved Haitian dish that symbolizes freedom and resilience. Traditionally enjoyed on Haitian Independence Day, it is a hearty and flavorful soup made with beef, vegetables, and squash. Making Soup Joumou at home allows you to experience a taste of Haitian culture and history.
Ingredients Needed
- 1 pound beef stew meat
- 1 large calabaza squash (or butternut squash)
- 2 carrots, sliced
- 2 stalks celery, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 scotch bonnet pepper (optional for heat)
- 1 teaspoon thyme
- 1 teaspoon parsley
- Salt and pepper to taste
- Vegetable oil
- 1 cup pasta or dumplings (optional)
Preparation Steps
Begin by cleaning and cutting the beef into chunks. In a large pot, heat some vegetable oil and brown the beef on all sides. Add chopped onions, garlic, and celery, and cook until fragrant. Pour in enough water to cover the meat and bring to a boil. Skim off any foam that forms.
While the meat cooks, peel and cube the calabaza squash. Add it to the pot along with carrots, thyme, parsley, salt, and pepper. If you like spicy soup, pierce the scotch bonnet pepper and add it to the pot. Reduce the heat and let everything simmer until the vegetables are tender and the beef is cooked through, about 1 to 2 hours.
Once the soup is ready, remove the scotch bonnet pepper. If you want to add pasta or dumplings, do so in the last 15 minutes of cooking. Adjust seasoning as needed. The soup should be rich, flavorful, and slightly thickened from the squash.
