Ingredients Needed

  • 200g soft (silken) tofu
  • 100g pork or beef (optional)
  • 1 onion, sliced
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1-2 tablespoons Korean red pepper flakes (gochugaru)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 3 cups chicken or vegetable broth
  • 1 egg (optional)
  • Salt and pepper to taste

Preparation Steps

Start by preparing your ingredients. If using meat, cut it into small pieces. Mince the garlic and slice the onion and green onions. Carefully open the soft tofu and set aside.

In a pot, heat the sesame oil over medium heat. Add the minced garlic and sliced onion, sautéing until fragrant and translucent. If using meat, add it now and cook until browned.

Add the Korean red pepper flakes (gochugaru) and soy sauce to the pot, stirring to combine. Pour in the broth and bring to a gentle boil. Reduce heat and let simmer for about 10 minutes to develop flavors.

Gently add the soft tofu into the broth, breaking it into chunks with a spoon. Be careful not to mash it. Let it simmer for another 5 minutes. Taste the broth and adjust seasoning with salt and pepper.

If desired, crack an egg into the soup and let it poach for a few minutes. Garnish with chopped green onions before serving hot.
