Discover the delightful world of sous vide cooking with this irresistible pineapple upside-down cake. Combining the precision of sous vide with classic caramelized fruit flavors, this dessert offers a unique twist on a beloved classic.

Ingredients Needed

  • 1 can of pineapple rings
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 prepared cake batter (your favorite recipe)
  • Optional: maraschino cherries for garnish

Preparing the Caramelized Fruit

Start by creating a caramel sauce. In a saucepan, melt the butter over medium heat. Add the brown sugar and stir until dissolved. Once the mixture thickens slightly, remove from heat. Arrange the pineapple rings in a single layer in a heatproof, vacuum-sealable bag or jar. Pour the caramel over the pineapple, ensuring each piece is coated evenly.

Cooking with Sous Vide

Set your sous vide cooker to 85°C (185°F). Submerge the bag or jar with the pineapple and caramel mixture into the water bath. Cook for 1 hour to allow the flavors to meld and the fruit to become tender. After cooking, carefully remove the bag from the water and let it cool slightly.

Assembling the Cake

Preheat your oven to 180°C (350°F). Grease your cake pan and pour the prepared cake batter into it. Using tongs or a spoon, carefully transfer the caramelized pineapple from the bag onto the batter, arranging the rings in an attractive pattern. Pour any remaining caramel over the top.

Baking and Serving

Bake the cake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes before inverting it onto a serving plate. Garnish with maraschino cherries if desired. Serve warm or at room temperature for a delicious dessert experience.
