Finnish Karelian pies, known locally as karjalanpiirakat, are traditional pastries from the Karelia region. They are loved for their thin rye crust and savory fillings, often served with a rich egg butter. In this guide, we’ll walk you through the process of making authentic Karelian pies with egg butter at home.

Ingredients Needed

  • 2 cups rye flour
  • 1 cup wheat flour
  • 1 ½ cups water
  • ½ teaspoon salt
  • 1 cup rice or potato filling
  • 1 cup unsalted butter
  • 2 hard-boiled eggs
  • 1 tablespoon milk (for egg butter)

Preparing the Dough

In a large mixing bowl, combine the rye flour, wheat flour, and salt. Gradually add water while stirring until the dough becomes soft but manageable. Knead the dough gently until smooth. Cover and let it rest for 30 minutes.

Forming the Pies

Divide the dough into small balls, about the size of a golf ball. Roll each ball into a thin, oval-shaped crust on a lightly floured surface. Place a spoonful of rice or potato filling in the center of each crust.

Carefully fold the edges of the dough over the filling, pinching to seal and forming a boat-shaped pie. Place the pies on a baking sheet lined with parchment paper.

Baking the Pies

Preheat your oven to 225°C (437°F). Bake the pies for about 15–20 minutes, or until the crust is firm and slightly browned. Remove from the oven and let cool slightly.

Making Egg Butter

While the pies are baking, prepare the egg butter. Finely chop the hard-boiled eggs and mix them with softened butter. Add a splash of milk to create a smooth, spreadable consistency. Season with a pinch of salt if desired.

Serving the Pies

Once the pies have cooled slightly, generously spread the egg butter over each. Serve warm or at room temperature. These pies are perfect as a snack or part of a traditional Finnish meal.

Enjoy your homemade Finnish Karelian pies with egg butter, and experience a delicious taste of Finnish heritage!
