Argentine-style lemon pie, known locally as “Tarta de Limón,” is a beloved dessert that combines a buttery crust, a tangy lemon filling, and a fluffy meringue topping. Making this pie at home is easier than you might think and results in a refreshing treat perfect for any occasion.

Ingredients Needed

  • 1 ½ cups of all-purpose flour
  • ½ cup of unsalted butter
  • ¼ cup of granulated sugar
  • 1 large egg
  • Pinch of salt
  • For the lemon filling:
  • 1 cup of fresh lemon juice
  • 1 tablespoon of lemon zest
  • ¾ cup of sugar
  • 3 large eggs
  • ¼ cup of cornstarch
  • 2 tablespoons of unsalted butter
  • For the meringue:
  • 3 large egg whites
  • ½ cup of granulated sugar

Preparing the Crust

Start by preheating your oven to 350°F (175°C). In a mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the egg and mix until the dough comes together. Press the dough into a greased 9-inch pie dish, ensuring an even layer. Bake for 15 minutes or until lightly golden. Let it cool before adding the filling.

Making the Lemon Filling

In a saucepan, whisk together the lemon juice, lemon zest, sugar, eggs, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil. Remove from heat and stir in the butter until smooth. Pour the hot filling into the cooled crust and spread evenly. Chill in the refrigerator for at least 2 hours to set.

Preparing the Meringue Topping

In a clean bowl, beat the egg whites until soft peaks form. Gradually add the sugar, continuing to beat until stiff peaks are achieved. Spread the meringue over the chilled lemon filling, making sure to seal the edges to prevent shrinking during baking.

Optional: For a golden finish, bake the pie in a 350°F (175°C) oven for 10-15 minutes until the meringue is lightly browned. Alternatively, use a kitchen torch to gently brown the meringue before serving.

Serving Suggestions

Slice the pie and serve chilled. This dessert pairs wonderfully with a dollop of whipped cream or a sprinkle of fresh lemon zest. Its bright flavors make it a perfect ending to any meal, especially during warm spring and summer days.
