Ingredients
- 200g dates, pitted and chopped
- 250ml boiling water
- 1 teaspoon baking soda
- 50g unsalted butter, softened
- 150g caster sugar
- 2 large eggs
- 200g self-raising flour
- 1 teaspoon vanilla extract
For the Caramel Sauce
- 200g light brown sugar
- 100g unsalted butter
- 200ml heavy cream
- 1 teaspoon vanilla extract
Preparation
Preheat your oven to 180°C (350°F). Grease a baking dish and set aside. In a bowl, combine the chopped dates, boiling water, and baking soda. Let it sit for 10 minutes to soften.
In a separate mixing bowl, cream together the softened butter and caster sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually fold in the self-raising flour.
Stir the softened date mixture into the batter until well combined. Pour the batter into the prepared baking dish and bake for 35-40 minutes, or until a skewer inserted in the center comes out clean.
Making the Caramel Sauce
Combine the light brown sugar and butter in a saucepan over medium heat. Stir continuously until the butter melts and the mixture begins to boil. Allow it to boil gently for 3-4 minutes, then remove from heat and stir in the heavy cream and vanilla extract. Let it cool slightly before serving.
Serving Suggestions
Cut the warm sticky toffee pudding into slices and drizzle generously with the caramel sauce. For an extra touch, serve with a dollop of whipped cream or a scoop of vanilla ice cream. This dessert is perfect for special occasions or a comforting treat after dinner.
