Stir in the egg yolk and add cold water gradually until the dough comes together. Wrap in cling film and chill in the refrigerator for 30 minutes.
Preheat your oven to 180°C (350°F). Roll out the chilled dough on a lightly floured surface to about 0.5cm thickness. Line a 23cm tart tin with the pastry, trimming any excess. Prick the base with a fork and chill again for 10 minutes to prevent shrinking.
Blind bake the pastry for 15 minutes, then remove the baking beans and bake for another 5 minutes until lightly golden. Set aside to cool slightly.
Meanwhile, prepare the filling. In a bowl, whisk together the golden syrup, double cream, lemon juice, vanilla extract, and egg until smooth. Pour the mixture into the cooled tart shell.
