Chicken pot pie is a comforting classic that combines tender chicken, fresh vegetables, and a rich, creamy sauce encased in flaky pastry. Making it at home allows you to enjoy a warm, hearty meal customized to your taste. This recipe guides you through creating a delicious homemade chicken pot pie with irresistibly flaky pastry.

Ingredients Needed

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 ½ cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 package store-bought or homemade flaky pastry dough

Preparing the Filling

Start by melting the butter in a large skillet over medium heat. Add the chopped onion and celery, cooking until they soften, about 5 minutes. Stir in the flour and cook for another minute to create a roux. Gradually whisk in the chicken broth and heavy cream, stirring constantly to prevent lumps. Continue cooking until the mixture thickens.

Add the cooked chicken, carrots, and peas to the sauce. Season with salt and pepper. Mix well and simmer for a few minutes to combine the flavors. Remove from heat and set aside.

Assembling the Pie

Preheat your oven to 400°F (200°C). Roll out half of the pastry dough to fit your pie dish. Place the dough in the dish, pressing gently to fit. Pour the prepared filling into the pastry-lined dish. Cover with the remaining pastry, trimming any excess and sealing the edges with a fork or your fingers.

Cut a few small slits on the top crust to allow steam to escape. For a golden finish, brush the top with an egg wash made from a beaten egg mixed with a tablespoon of water.

Baking and Serving

Place the assembled pie on a baking sheet to catch any drips and bake in the preheated oven for 35-40 minutes, or until the crust is golden brown. Let the pie rest for a few minutes before serving. Enjoy your homemade chicken pot pie with a side salad or steamed vegetables for a complete meal.
