Homemade meatloaf is a comforting classic that many families enjoy. Paired with a tangy tomato glaze and creamy mashed potatoes, it creates a hearty and satisfying meal perfect for any dinner table.

Ingredients for the Meatloaf

  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 egg
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Ingredients for the Tomato Glaze

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon vinegar
  • 1 teaspoon Worcestershire sauce

Ingredients for Mashed Potatoes

  • 4 large potatoes, peeled and chopped
  • 4 tablespoons butter
  • 1/2 cup milk
  • Salt and pepper to taste

Preparing the Meatloaf

Preheat your oven to 350°F (175°C). In a large bowl, combine ground beef, breadcrumbs, milk, chopped onion, egg, minced garlic, salt, and pepper. Mix thoroughly until all ingredients are well incorporated. Shape the mixture into a loaf and place it in a baking dish.

In a small bowl, mix ketchup, brown sugar, vinegar, and Worcestershire sauce to make the glaze. Spread half of the glaze over the top of the meatloaf. Bake for 45-55 minutes, then remove from oven and spread the remaining glaze over the top. Return to oven and bake for an additional 10 minutes.

Preparing the Mashed Potatoes

While the meatloaf is baking, prepare the mashed potatoes. Place peeled and chopped potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15 minutes. Drain well.

Return potatoes to the pot, add butter, and mash until smooth. Gradually add milk until the desired creamy consistency is reached. Season with salt and pepper.

Serving Suggestions

Slice the meatloaf and serve it hot, topped with extra tomato glaze if desired. Pair with a generous helping of mashed potatoes and steamed vegetables for a complete meal. This dish is perfect for family dinners and special occasions alike.
