Ingredients Needed

  • 2 cups couscous
  • 1 lb lamb shoulder, cut into chunks
  • 2 carrots, sliced
  • 2 zucchinis, sliced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • 4 cups chicken broth
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Preparation Steps

Start by heating olive oil in a large pot over medium heat. Add the lamb chunks and cook until browned on all sides. Remove the lamb and set aside.

In the same pot, add chopped onions and minced garlic. Sauté until translucent and fragrant. Stir in cumin, paprika, cinnamon, salt, and pepper to season the base.

Return the lamb to the pot, then pour in chicken broth. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the lamb is tender.

Add carrots and zucchinis to the pot during the last 15 minutes of cooking. This allows the vegetables to soften while keeping their flavor.

Preparing the Couscous

While the stew simmers, prepare the couscous. Place the couscous in a heatproof bowl and pour boiling water over it, covering by about an inch. Cover and let sit for 5 minutes.

Fluff the couscous with a fork, then stir in a tablespoon of olive oil or butter for extra flavor. Keep warm.
