Ingredients Needed

  • 6 large egg yolks
  • 3/4 cup granulated sugar
  • 1 cup heavy cream
  • 16 oz mascarpone cheese
  • 1 cup strong brewed coffee, cooled
  • 2 tbsp coffee liqueur (optional)
  • 24 ladyfingers
  • Cocoa powder for dusting

Preparation Steps

1. Prepare the Mascarpone Mixture

In a heatproof bowl, whisk together egg yolks and sugar. Place the bowl over a pot of simmering water and whisk constantly until the mixture thickens and reaches 160°F (71°C). Remove from heat and let it cool slightly. In a separate bowl, beat the heavy cream until stiff peaks form. Gently fold the mascarpone into the cooled egg yolk mixture, then fold in the whipped cream until smooth.

2. Set Up the Sous Vide Bath

Preheat your sous vide water bath to 135°F (57°C). Place the mascarpone mixture into a vacuum-sealable bag or a zip-top bag, removing as much air as possible. Submerge the bag in the water bath and cook for 1 hour to ensure a safe and creamy texture.

3. Assemble the Tiramisu

Once the mascarpone mixture is ready, gently remove it from the bag. Dip ladyfingers briefly into the cooled coffee mixed with coffee liqueur if using. Arrange a layer of dipped ladyfingers in a serving dish. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and the remaining mascarpone. Cover and refrigerate for at least 4 hours or overnight for best results.

Finishing Touches

Before serving, dust the top with cocoa powder. For an extra touch, add chocolate shavings or grated dark chocolate. Serve chilled and enjoy the perfect blend of coffee, creamy mascarpone, and tender ladyfingers.
