Preparing the Eggplant and Caponata

Start by seasoning the eggplant slices with salt and letting them sit for about 10 minutes to draw out excess moisture. Then, rinse and pat dry. Heat a little olive oil in a skillet over medium heat and cook the eggplant slices until they are golden brown on both sides. Set aside.
