Are you looking for a delicious and healthy lunch option that is both vegan and dairy-free? A pesto panini is a perfect choice! It combines fresh flavors with warm, crispy bread. Here’s a simple recipe to make your own vegan and dairy-free pesto panini at home.

Ingredients Needed

  • 2 slices of whole-grain or sourdough bread
  • 1/4 cup vegan pesto (see recipe below)
  • 1/2 cup sliced cherry tomatoes
  • 1/4 cup fresh basil leaves
  • 1/4 cup sliced vegan cheese (optional)
  • 1 tablespoon olive oil

Vegan Pesto Recipe

To make your own vegan pesto, you will need:

  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts or walnuts
  • 2 cloves garlic
  • 1/4 cup nutritional yeast
  • 1/4 cup olive oil
  • Juice of half a lemon
  • Salt and pepper to taste

Blend all ingredients in a food processor until smooth. Adjust seasoning as needed. Set aside.

Preparing the Panini

Start by spreading the vegan pesto evenly on one side of each bread slice. Layer the sliced cherry tomatoes, basil leaves, and vegan cheese if using on one slice. Cover with the other slice, pesto side down.

Heat a panini press or a skillet over medium heat. Brush the outside of the sandwich with olive oil. Place the sandwich in the press or skillet and cook until the bread is golden brown and crispy, about 3-4 minutes per side if using a skillet.

Serving Suggestions

Cut the panini in half and serve warm. It pairs well with a side salad or fresh fruit for a complete meal. Enjoy your vegan and dairy-free pesto panini as a quick lunch or a satisfying snack!
