Ingredients Needed

  • 4 slices of whole-grain bread
  • 1 cup fresh spinach leaves
  • 1 cup sliced mushrooms (button or cremini)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Vegan cheese (optional)

Preparation Steps

Start by preparing the filling. Heat one tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant. Then, add the sliced mushrooms and cook for about 5 minutes until they release their moisture and become tender. Season with salt and pepper.

Next, add the fresh spinach to the skillet. Cook for another 2-3 minutes until wilted. Remove from heat and set aside.

Assembling the Panini

Spread a thin layer of olive oil on one side of each bread slice. Place two slices of bread, oiled side down, on a clean surface. Distribute the mushroom and spinach mixture evenly over these slices. If using vegan cheese, add a slice on top of the filling.

Top with the remaining bread slices, oiled side up. Press down gently to compact the sandwich.

Cooking the Panini

Preheat a panini press or a skillet over medium heat. If using a skillet, place a heavy object or a pan on top to press the sandwich down. Cook for about 4-5 minutes until the bread is golden brown and crispy.
