Making an authentic French baguette at home is a rewarding baking project. Using a stand mixer simplifies the process while still achieving that classic crust and chewy interior. Here’s a step-by-step guide to help you create perfect baguette dough with your stand mixer.

Ingredients Needed

  • 4 cups (500g) bread flour
  • 1 1/2 cups (360ml) lukewarm water
  • 2 teaspoons salt
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 tablespoon olive oil (optional)

Preparing the Dough

Start by activating the yeast. In a small bowl, combine the lukewarm water, sugar, and yeast. Let it sit for 5-10 minutes until it becomes frothy. This indicates the yeast is active.

In the bowl of your stand mixer, add the bread flour and salt. Attach the dough hook and turn on the mixer to low speed. Slowly pour in the activated yeast mixture and olive oil if using.

Mix on low speed for about 8-10 minutes until the dough is smooth and elastic. If the dough is too sticky, add a little more flour; if too dry, add a small amount of water.

First Rise and Shaping

Lightly oil a large bowl and place the dough inside. Cover with a damp cloth or plastic wrap. Let it rise in a warm place for about 1 to 1.5 hours, or until doubled in size.

Once risen, punch down the dough gently to release excess air. Turn it out onto a lightly floured surface and divide into two or three equal pieces, depending on your preferred baguette size.

Shape each piece into a long, thin baguette by rolling and stretching gently. Place the shaped dough onto a parchment-lined baking sheet or a baguette pan.

Final Proof and Baking

Cover the shaped baguettes with a clean kitchen towel and let them proof for another 30-45 minutes until puffy.

Preheat your oven to 475°F (245°C). Place a shallow pan of water on the bottom rack to create steam, which helps develop a crispy crust.

Just before baking, make several diagonal slashes on each baguette with a sharp knife. Bake for 20-25 minutes until golden brown and crusty.
