Ingredients Needed

  • For the shells:
  • 2 cups all-purpose flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter, cold
  • 1/2 cup white wine or Marsala wine
  • 1 egg, beaten
  • Vegetable oil for frying
  • For the filling:
  • 2 cups ricotta cheese
  • 1 cup powdered sugar

  • Optional: mini chocolate chips or chopped pistachios

Making the Shells

Start by combining the flour, sugar, and salt in a large bowl. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add the wine and beaten egg, mixing until the dough comes together. Knead briefly on a floured surface until smooth. Wrap in plastic and refrigerate for at least 1 hour.

Once chilled, roll out the dough to about 1/8 inch thickness. Use a round cutter or a glass to cut out circles about 4 inches in diameter. Wrap each circle around a metal cannoli tube, sealing the edge with a little beaten egg.

Heat vegetable oil in a deep pan to 350°F (175°C). Fry the shells in batches until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels. Let cool before carefully removing the metal tubes.

Preparing the Filling

In a mixing bowl, combine ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth. For added flavor, fold in mini chocolate chips or chopped pistachios if desired. Chill the filling for at least 30 minutes before piping into the shells.

Assembling the Cannoli

Using a piping bag or a plastic bag with the tip cut off, fill each shell with the ricotta mixture. Be careful not to overfill to prevent leakage. Once filled, dust the cannoli with powdered sugar for presentation.

Serve immediately to enjoy the crisp shells and creamy filling. For best results, prepare the shells ahead of time and fill just before serving.
