Ingredients Needed

  • 1 whole fish (snapper or grouper), cleaned and scaled
  • 2 cups of broken rice
  • 2 carrots, sliced
  • 1 eggplant, sliced
  • 1 cabbage, chopped
  • 2 tomatoes, chopped
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1/4 cup vegetable oil
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Preparation Steps

Start by preparing the fish. Season it with salt, pepper, paprika, and cayenne pepper. Set aside. In a large pot, heat the vegetable oil over medium heat. Fry the fish until golden brown on all sides, then remove and set aside.

In the same pot, add sliced onions and minced garlic. Sauté until fragrant. Add chopped tomatoes and cook until they break down into a sauce. Incorporate thyme, salt, and pepper to enhance the flavor.

Meanwhile, rinse the broken rice thoroughly. In a separate pot, cook the rice in boiling water with a pinch of salt until tender. Drain excess water if necessary.
