Making your own fruit preserves is a rewarding way to enjoy seasonal fruits year-round. Water bath canning is a traditional method that ensures your preserves stay fresh and safe to eat for months. This guide will walk you through the steps to create delicious fruit preserves using water bath canning techniques.

Gather Your Supplies

  • Fresh, ripe fruit
  • Sugar
  • Lemon juice (optional but recommended)
  • Glass jars with lids and bands
  • Large pot or canner with a rack
  • Jar lifter and funnel
  • Water for boiling

Prepare the Fruit

Wash the fruit thoroughly. Depending on the type of fruit, you may need to peel, pit, or chop it into smaller pieces. For most preserves, uniform pieces help in even cooking and better presentation.

Cook the Preserves

Combine the prepared fruit with sugar and lemon juice in a large pot. Bring the mixture to a boil over medium-high heat, stirring frequently. Reduce the heat and simmer until the fruit is soft and the mixture has thickened, usually about 20-30 minutes.

Prepare the Jars

While the fruit mixture is cooking, sterilize your jars and lids by boiling them in water for 10 minutes. Keep them hot until ready to fill to prevent cracking and contamination.

Fill and Seal the Jars

Use a funnel to ladle the hot fruit preserves into the sterilized jars, leaving about ¼ inch headspace. Wipe the rims of the jars with a clean cloth to remove any residue. Place the lids on the jars and screw on the bands until just tight.

Process in the Water Bath

Place the filled jars into the water bath canner, ensuring they are covered by at least 1-2 inches of water. Bring the water to a boil and process the jars for 10-15 minutes, adjusting for altitude if necessary. Once done, turn off the heat and let the jars sit in the water for a few minutes.

Cool and Store

Remove the jars from the water and place them on a towel or cooling rack. Let them cool undisturbed for 12-24 hours. You should hear the lids pop, indicating a proper seal. Store your preserves in a cool, dark place. Enjoy your homemade fruit preserves throughout the year!
