  • 1 ½ cups Arborio rice
  • 4 cups vegetable broth
  • 1 pound fresh mushrooms (such as cremini or shiitake)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup dry white wine (optional)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Step-by-Step Instructions

Step 1: Prepare the broth by heating it in a saucepan and keeping it warm on low heat. This helps the rice cook evenly.

Step 2: Clean and chop the mushrooms into bite-sized pieces. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the mushrooms and cook until they are browned and tender, about 5-7 minutes. Set aside.

Step 3: In a separate large pot or deep skillet, heat the remaining tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Add the garlic and cook for another minute.
