Mushroom soup is a comforting and versatile dish that can be made using both fresh and dried mushrooms. This guide will walk you through the steps to create a delicious homemade mushroom soup that highlights the rich flavors of different mushroom varieties.

Ingredients Needed

  • 2 cups fresh mushrooms (such as cremini, button, or shiitake)
  • 1/2 cup dried mushrooms (porcini or shiitake work well)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream or coconut milk (optional for creaminess)
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste
  • Fresh herbs for garnish (parsley, thyme)

Preparation Steps

Start by rehydrating the dried mushrooms. Place them in a bowl with warm water and let them soak for about 20 minutes. Once softened, drain and chop them into smaller pieces. Reserve the soaking water for added flavor.

In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Then, add the minced garlic and cook for another minute.

Add the fresh mushrooms to the pot and cook until they release their moisture and become tender, about 8 minutes. Stir in the chopped dried mushrooms and cook for an additional 2 minutes.

Pour in the broth and the reserved mushroom soaking water (strain to remove any grit). Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes to allow flavors to meld.

If you prefer a creamier soup, stir in the heavy cream or coconut milk during the last 5 minutes of cooking. Season with salt and pepper to taste.

Serving Suggestions

Garnish your mushroom soup with fresh herbs like parsley or thyme for added flavor. Serve hot with crusty bread or a side salad for a complete meal. This soup also stores well in the refrigerator and can be reheated for a quick, satisfying lunch or dinner.
