If you’re a vegan pastry enthusiast, making traditional cannoli shells might seem challenging. However, with the right technique and flexible molds, you can create delicious vegan cannoli shells at home. This guide will walk you through the process step by step.

Ingredients Needed

  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1/2 cup unsweetened plant-based milk
  • 1 teaspoon apple cider vinegar
  • Vegan cooking spray
  • Flexible cannoli molds

Preparing the Dough

In a large bowl, whisk together the flour, sugar, and salt. In a separate small bowl, combine the vegetable oil, plant-based milk, and apple cider vinegar. Gradually pour the wet ingredients into the dry ingredients, mixing until a dough forms. Knead the dough for about 5 minutes until smooth. Cover and let it rest for 30 minutes.

Shaping the Shells

Divide the dough into small portions. Roll each portion into a thin circle, about 1/8 inch thick. Lightly spray the flexible molds with vegan cooking spray. Wrap each dough circle around a mold, sealing the edges with a little water.

Cooking the Cannoli Shells

Preheat your oven to 375°F (190°C). Place the molds on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the shells are golden brown. Remove from the oven and let them cool completely before carefully removing the molds.

Serving Tips

Once cooled, fill the shells with vegan ricotta or your favorite vegan cream. Decorate with chopped nuts or vegan chocolate chips for extra flavor. Enjoy your homemade vegan cannoli!
