Gather Your Ingredients

  • 1 lb (450 g) shrimp, peeled and deveined
  • 1 lb (450 g) mussels, cleaned
  • 1 cup arborio or bomba rice
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 4 cups seafood broth
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon saffron threads
  • Olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Wedges of lemon for serving

Prepare the Base

Start by heating a generous amount of olive oil in a large, shallow skillet or paella pan over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic and cook for another minute. Add the diced bell pepper and cook until softened. Pour in the diced tomatoes and cook for a few minutes to develop flavor.

Cook the Rice and Seafood
