Ingredients Needed

  • 1 pound beef, chicken, or seafood (optional)
  • 2 cups of eggplant, chopped
  • 1 cup green beans, trimmed
  • 1 cup carrots, sliced
  • 1 cup squash, diced
  • 1/2 cup okra, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tomatoes, chopped
  • 2 tablespoons tomato paste
  • 2 tablespoons vegetable oil
  • 1 teaspoon thyme
  • 1 Scotch bonnet pepper (optional for heat)
  • Salt and pepper to taste
  • 4 cups water or broth

Preparation Steps

Start by preparing your proteins if using. Season the meat or seafood with salt, pepper, and some garlic. In a large pot, heat the vegetable oil over medium heat. Add the protein and cook until browned. Remove and set aside.
