Ingredients Needed for Authentic Argentine Locro

  • 1 cup dried white beans (such as cannellini or navy beans)
  • 1 cup dried corn kernels (preferably hominy or large dried corn)
  • 500 grams beef bones or beef shank
  • 200 grams pork ribs or pork shoulder
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 large pumpkin or squash, peeled and diced
  • 2 tablespoons paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Preparing the Ingredients

Start by soaking the dried beans and corn overnight in plenty of water. This softens them and reduces cooking time. Rinse them thoroughly before cooking. Meanwhile, prepare the meat by trimming excess fat and cutting into manageable pieces.

Cooking the Locro

In a large pot, add the beef bones and pork ribs with enough water to cover. Bring to a boil and simmer for about 1 hour to make a flavorful broth. Remove the bones and set aside.
