Ingredients Needed

  • 1 kilogram pork ribs or pork shoulder
  • 1 large onion, sliced
  • 2 tomatoes, quartered
  • 6 cups water
  • 200 grams tamarind paste or fresh tamarind
  • 2 radishes, sliced
  • 1 cup long green beans
  • 1 cup bok choy or cabbage
  • Fish sauce or salt to taste
  • Optional: chili peppers for extra spice

Preparation Steps

Start by preparing the tamarind broth. If using fresh tamarind, boil it in water until soft, then strain to extract the sour liquid. If using tamarind paste, dissolve it directly in boiling water.

In a large pot, bring water to a boil. Add the pork, onion, and tomatoes. Lower the heat and let it simmer until the pork becomes tender, about 1 to 1.5 hours.

Once the pork is tender, add the tamarind broth to the pot. Adjust the sourness by adding more tamarind or water, depending on your preference.

Add the radishes and cook for about 5 minutes. Then, add the green beans and cook for another 3 minutes. Finally, toss in the bok choy or cabbage and cook until wilted.
