Ingredients Needed

  • 400 grams of firm tofu
  • 200 grams of palm sugar or brown sugar
  • 2 stalks of lemongrass, bruised
  • 4 cloves of garlic, minced
  • 3 shallots, sliced
  • 2 bay leaves
  • 1 teaspoon of coriander seeds
  • 1 teaspoon of salt
  • 500 ml of water
  • 2 tablespoons of sweet soy sauce (kecap manis)

Preparation Steps

First, cut the tofu into rectangular or square pieces, then blanch them in boiling water for 5 minutes to remove excess oil and improve texture. Drain and set aside.

In a pot, combine water, palm sugar, lemongrass, garlic, shallots, bay leaves, coriander seeds, and salt. Bring the mixture to a boil, stirring until the sugar dissolves completely.

Add the tofu pieces to the boiling marinade. Reduce the heat to low and simmer uncovered for about 30-45 minutes, or until the liquid reduces and the tofu absorbs the flavors. Turn the tofu occasionally to ensure even marination.

Once the marinade thickens and becomes syrupy, stir in the sweet soy sauce. Continue simmering for another 5 minutes to enhance the color and flavor.

Serving Suggestions

Allow the Tahu Bacem to cool slightly before serving. It can be enjoyed hot or at room temperature. For added flavor, garnish with chopped scallions or fried shallots. Tahu Bacem pairs well with steamed rice, vegetables, or as part of a larger Indonesian feast.
