Korean-style Bibim Guksu is a refreshing and spicy cold noodle salad that is perfect for hot summer days. It features chewy noodles mixed with a flavorful, spicy sauce and fresh vegetables. Learning how to prepare this dish allows you to enjoy an authentic taste of Korea at home.

Ingredients Needed

  • 200g Korean wheat noodles (somyeon)
  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 2 boiled eggs, halved
  • 2 tablespoons sesame seeds
  • Fresh lettuce or greens (optional)

For the Spicy Sauce

  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger

Preparation Steps

Start by boiling a large pot of water. Cook the noodles according to the package instructions until they are al dente. Drain and rinse the noodles under cold water to stop the cooking process and cool them down. Set aside.

In a small bowl, combine gochujang, soy sauce, sesame oil, rice vinegar, sugar, minced garlic, and grated ginger. Mix well until the sauce is smooth and uniform.

In a large mixing bowl, toss the cooled noodles with the spicy sauce until evenly coated. Add the sliced cucumber and julienned carrot, mixing gently.

Transfer the Bibim Guksu to serving plates. Garnish with halved boiled eggs and sprinkle sesame seeds on top. You can also add fresh greens for extra freshness.

Enjoy Your Meal

This Korean-style Bibim Guksu is best enjoyed immediately while cold and spicy. It is a perfect dish for a quick lunch or a light dinner. Feel free to adjust the spice level by adding more gochujang if you like it extra spicy!
