Korean-style spicy cold noodles, known as Bibim Naengmyeon, are a refreshing and spicy dish perfect for hot days. This guide will walk you through the steps to prepare this delicious dish with cucumber and egg.

Ingredients Needed

  • 200g naengmyeon (buckwheat or wheat noodles)
  • 1 cucumber, thinly sliced
  • 2 eggs
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 tablespoon sesame seeds
  • Optional: sliced pear or apple for extra sweetness

Preparation Steps

1. Cook the Noodles

Bring a large pot of water to a boil. Add the noodles and cook according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process. Set aside to cool.

2. Prepare the Spicy Sauce

In a small bowl, mix gochujang, soy sauce, rice vinegar, sesame oil, and sugar until well combined. Adjust the spice level by adding more gochujang if desired.

3. Cook the Eggs

Boil the eggs for about 8 minutes for a soft yolk or longer for a firmer yolk. Cool the eggs in cold water, peel, and slice them thinly.

4. Assemble the Dish

In a large mixing bowl, combine the cooled noodles with the spicy sauce. Toss well to coat evenly. Add sliced cucumber and egg slices. Garnish with sesame seeds and optional sliced fruit for added flavor.

Serving Suggestions

Serve the spicy cold noodles immediately for the best flavor and texture. You can add extra chopped scallions or a dash of sesame oil on top. This dish is perfect as a light lunch or a refreshing dinner.
