Moroccan-style grilled lamb skewers, also known as “Brochettes d’Agneau,” are a flavorful and aromatic dish that captures the essence of Moroccan cuisine. Perfect for summer barbecues or special dinners, these skewers combine tender lamb with a blend of spices and herbs that create a memorable taste experience.
Ingredients Needed
- 1.5 pounds (700g) lamb shoulder or leg, cut into 1-inch cubes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon turmeric
- 1 teaspoon ground coriander
- Salt and freshly ground black pepper to taste
- Juice of 1 lemon
- Fresh parsley or cilantro for garnish
- Wooden or metal skewers
Preparation Steps
Start by preparing the marinade. In a large bowl, combine olive oil, minced garlic, cumin, paprika, cinnamon, turmeric, coriander, lemon juice, salt, and pepper. Mix well to create a flavorful marinade.
Add the lamb cubes to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
While the lamb marinates, prepare your grill—either charcoal or gas—preheating it to medium-high heat. If using wooden skewers, soak them in water for about 30 minutes to prevent burning.
Thread the marinated lamb pieces onto the skewers, leaving a little space between each piece for even cooking.
Grilling and Serving
Place the skewers on the preheated grill. Cook for about 8-10 minutes, turning occasionally, until the lamb is nicely charred and cooked to your preferred doneness.
Remove the skewers from the grill and let them rest for a few minutes. Garnish with chopped parsley or cilantro before serving.
Serve your Moroccan-style grilled lamb skewers with traditional sides such as couscous, flatbread, or a fresh salad for a complete meal that transports you to Morocco with every bite.
