Ingredients Needed

  • 4 large zucchinis
  • 1 pound ground turkey or 1 cup cooked lentils
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup cooked rice or quinoa (optional)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup shredded dairy-free cheese (optional)

Preparation Steps

Start by preheating your oven to 375°F (190°C). While the oven heats, prepare the zucchinis by washing them thoroughly. Cut off the stems and slice each zucchini in half lengthwise. Using a spoon, carefully scoop out the centers to create a hollow cavity for the filling, leaving about 1/4 inch of flesh attached to the skin.

In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking until fragrant and translucent, about 3-4 minutes. If using ground turkey, add it to the skillet and cook until browned, breaking it apart with a spoon. If using lentils, add the cooked lentils to the skillet along with the sautéed onion and garlic. Stir in the dried oregano, basil, salt, and pepper.

Mix in the cooked rice or quinoa if desired, for added texture and bulk. Remove the skillet from heat once everything is well combined. Stuff each zucchini half with the filling, pressing down gently to pack it in.

Place the stuffed zucchinis in a baking dish. If you like, sprinkle shredded dairy-free cheese on top for extra flavor. Cover the dish with foil and bake for 25-30 minutes, or until the zucchinis are tender.

Remove from the oven and let cool slightly before serving. This dish pairs well with a fresh green salad and is perfect for a nutritious, nightshade-free meal.
