Ingredients

  • 1 boneless turkey breast (about 3-4 pounds)
  • 2 lemons, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • For the cranberry sauce:
  • 12 ounces fresh cranberries
  • 1 cup sugar
  • 1 cup water
  • 1 orange, juiced and zested

Preparation

Start by preheating your oven to 375°F (190°C). In a small bowl, mix olive oil, minced garlic, chopped herbs, salt, and pepper. Rub this mixture all over the turkey breast, then layer lemon slices on top and around the meat for added flavor.

Place the turkey in a roasting pan and roast for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste occasionally with pan juices to keep the meat moist. Once cooked, let the turkey rest for 10 minutes before slicing.

Making the Cranberry Sauce

While the turkey is roasting, prepare the cranberry sauce. In a saucepan, combine cranberries, water, sugar, orange juice, and zest. Bring to a boil, then reduce heat and simmer for about 10-15 minutes, until the cranberries burst and the sauce thickens. Remove from heat and let cool slightly.
