  • 1 cup Arborio rice
  • 200g fresh scallops
  • 200g large shrimp, peeled and deveined
  • 4 cups seafood broth
  • 1 small onion, finely chopped

  • 1/2 cup dry white wine
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste

Preparation Steps

Start by heating the seafood broth in a saucepan and keeping it warm. In a separate large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 3 minutes. Stir in the garlic and cook for another minute.

Add the Arborio rice to the skillet and stir well to coat each grain with oil. Pour in the white wine and cook until it is mostly absorbed. Begin adding the warm seafood broth, one ladle at a time, stirring constantly. Wait until the liquid is mostly absorbed before adding more broth. Continue this process until the rice is creamy and al dente, about 20 minutes.

While the risotto cooks, season the scallops and shrimp with salt and pepper. In a separate skillet, melt 1 tablespoon of butter over medium-high heat. Sear the scallops for 2-3 minutes on each side until golden brown. Remove and set aside. In the same skillet, cook the shrimp until pink and opaque, about 2 minutes per side.

Once the risotto is ready, stir in the remaining butter and Parmesan cheese. Gently fold in the cooked scallops and shrimp. Taste and adjust seasoning as needed.
