Moroccan cuisine is renowned for its bold flavors, aromatic herbs, and colorful presentations. One delicious way to bring these flavors into your home is by making Moroccan-style stuffed bell peppers with rice and herbs. This dish combines the sweetness of bell peppers with fragrant spices and fresh herbs, creating a satisfying and healthy meal.

Ingredients Needed

  • 4 large bell peppers (red, yellow, or green)
  • 1 cup long-grain rice
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1 cup chopped fresh herbs (parsley, cilantro, mint)
  • 1/2 cup raisins or chopped dried apricots
  • Salt and pepper to taste
  • Optional: crumbled feta or goat cheese for topping

Preparation Steps

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the outside of the peppers with a little olive oil and place them in a baking dish.

In a medium saucepan, cook the rice according to package instructions. While the rice cooks, heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the garlic, cumin, coriander, paprika, and cinnamon, cooking for another minute to release their aromas.

Add the cooked rice to the skillet, along with the chopped herbs, raisins (or dried apricots), salt, and pepper. Mix well and cook for another 2-3 minutes, allowing the flavors to meld.

Spoon the rice mixture into each prepared bell pepper, pressing gently to pack the filling. Cover the baking dish with foil and bake for 30-35 minutes, or until the peppers are tender.

For an extra touch, sprinkle crumbled feta or goat cheese over the stuffed peppers during the last 5 minutes of baking. Serve hot, garnished with additional fresh herbs if desired.

Enjoy Your Moroccan-Style Stuffed Peppers

This dish pairs beautifully with a side of Moroccan bread or a simple green salad. Its vibrant flavors and colorful presentation make it a perfect centerpiece for a family dinner or a special occasion. Experiment with different herbs and dried fruits to customize the flavor profile to your liking. Bon appétit!
