Selecting Fresh Clams

Start by choosing live, fresh clams from a reputable seafood market. Look for clams with tightly closed shells or shells that close when tapped. Avoid any with cracked or broken shells, as they may be dead or spoiled.

Initial Cleaning

Rinse the clams under cold, running water to remove surface dirt. Use a brush or your fingers to scrub the shells gently. This step helps remove any residual mud or debris on the surface.

De-sanding Process

Clams naturally filter sand and grit from their environment. To remove these, soak the cleaned clams in a bowl of cold, salted water for 20-30 minutes. Use about 1/4 cup of salt per quart of water to mimic seawater. During soaking, the clams will expel sand and grit.

For more effective cleaning, gently stir the clams in the water every 10 minutes. After soaking, lift the clams out of the water—do not pour out the water with the sand—and rinse them again under cold water.

Optional: Purging with Cornmeal or Flour

Some cooks add a handful of cornmeal or flour to the soaking water. This helps clams purge any remaining grit and improves their flavor. After soaking, rinse the clams thoroughly to remove any residual particles.

Preparing for Cooking

Once cleaned, discard any clams with open shells that do not close when tapped, as they are likely dead. Keep the remaining clams cold until ready to cook. They can be stored in the refrigerator in a breathable container for up to 24 hours.

Cooking Methods

Clams are versatile and can be steamed or baked. For steaming, place the clams in a pot with a little water or wine, cover, and cook until the shells open, about 5-10 minutes. For baking, arrange the clams on a baking sheet, add seasonings, and bake at 375°F (190°C) until open, about 10-15 minutes.
