Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • For the dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey or maple syrup
  • Salt and pepper to taste

Preparation

Start by rinsing the quinoa thoroughly under cold water. In a medium saucepan, combine the quinoa with water or vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the liquid is absorbed. Let it cool slightly.

While the quinoa cools, prepare the vegetables and herbs. In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, parsley, cilantro, and mint. If using feta, add it to the bowl as well.

In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to create the dressing. Pour the dressing over the salad ingredients and toss gently to combine.

Once the quinoa is cooled, add it to the bowl and mix thoroughly. Adjust seasoning as needed. Serve immediately or refrigerate for an hour to allow flavors to meld.
