Ingredients

  • 1 pound (450g) beef sirloin, cut into cubes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • Skewers for grilling

For the Spiced Couscous

  • 1 cup couscous
  • 1 1/4 cups water or chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cinnamon
  • Salt to taste
  • Optional: chopped fresh herbs (parsley or cilantro)

Preparation

Start by marinating the beef. In a bowl, combine olive oil, cumin, paprika, cinnamon, turmeric, salt, and pepper. Toss the beef cubes in the marinade and let sit for at least 30 minutes.

While the beef marinates, prepare the couscous. In a saucepan, bring water or broth to a boil. Add the olive oil, cumin, coriander, cinnamon, and salt. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork. Mix in chopped herbs if desired.

Preheat the grill to medium-high heat. Thread the beef cubes onto skewers. Grill the kebabs for about 8-10 minutes, turning occasionally, until the beef is cooked to your liking.

Serve the hot beef kebabs over the spiced couscous for a complete Moroccan-inspired meal. Garnish with additional herbs or a squeeze of lemon for extra flavor.
