Ingredients
- 8 ounces of your favorite pasta
- 2 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- Salt and pepper to taste
- Optional: grated Parmesan cheese or vegan cheese
Instructions
Begin by heating the olive oil in a large pot over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the cherry tomatoes and cook for 2-3 minutes until they start to soften.
Next, pour in the vegetable broth and bring it to a boil. Add the pasta, season with salt and pepper, and reduce the heat to a simmer. Cover the pot and cook according to the pasta package instructions, usually about 10-12 minutes, stirring occasionally.
Once the pasta is al dente and most of the liquid has been absorbed, stir in the fresh spinach. Cook for another 2-3 minutes until the spinach wilts and is tender. Taste and adjust the seasoning if needed.
Serve hot, topped with grated Parmesan or vegan cheese if desired. Enjoy your nutritious and effortless one-pot vegetarian pasta!
