Matambre is a traditional Argentine dish known for its flavorful and tender qualities. It is a thin cut of beef that is often rolled with a variety of vegetables and herbs, then cooked to perfection. Preparing a Matambre with vegetables and herbs is a delightful way to enjoy a hearty and nutritious meal that captures the essence of Argentine cuisine.

Ingredients Needed

  • 1.5 kg of thin beef matambre
  • 1 cup of chopped parsley
  • 1/2 cup of chopped cilantro
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 carrot, grated
  • Salt and pepper to taste
  • Olive oil for drizzling

Preparation Steps

Start by preparing the herb mixture. In a bowl, combine the chopped parsley, cilantro, minced garlic, salt, and pepper. Mix well to create a flavorful herb paste.

Lay the matambre flat on a clean surface. Spread the herb mixture evenly over the entire surface of the meat. Arrange the sliced bell peppers, zucchini, and grated carrot evenly over the herb-coated meat.

Carefully roll the matambre tightly, ensuring that the vegetables stay inside. Secure the roll with kitchen twine or toothpicks if necessary.

Preheat the oven to 180°C (350°F). Place the rolled matambre in a baking dish. Drizzle with olive oil and cover with aluminum foil.

Bake for about 1.5 hours, or until the meat is tender. Remove the foil during the last 15 minutes to allow the exterior to brown slightly.

Serving Suggestions

Let the Matambre rest for a few minutes before slicing. Serve it sliced into rounds, accompanied by a fresh salad or traditional Argentine chimichurri sauce. This dish pairs well with crusty bread and a glass of Argentine red wine.

Tips for Success

  • Ensure the matambre is thin and evenly sliced for uniform cooking.
  • Use fresh herbs for maximum flavor.
  • Secure the roll tightly to prevent the filling from spilling out during baking.
  • Adjust the vegetables based on seasonal availability or personal preference.
