Preparation Steps

Start by preparing the filling. Grate the palm sugar into small pieces. This will make it easier to form into balls later. If you want colorful klepon, add a few drops of food coloring to the water and mix well.

Next, make the dough. In a mixing bowl, combine the glutinous rice flour and a pinch of salt. Gradually add the pandan water while kneading until the mixture becomes smooth and pliable. If the dough is too sticky, add a little more rice flour; if too dry, add a few drops of water.

Take a small portion of dough and flatten it in your palm. Place a small piece of grated palm sugar in the center, then carefully seal the dough around the filling, forming a smooth ball.

Bring a pot of water to a boil. Carefully drop the rice cake balls into the boiling water. Cook until they float to the surface, which indicates they are done, usually about 3-5 minutes.

While the klepon are boiling, prepare the shredded coconut. If using dried coconut, steam or lightly toast it with a pinch of salt until fragrant. Allow to cool slightly.

Remove the cooked klepon with a slotted spoon and roll them in the shredded coconut until fully coated. Serve warm or at room temperature as a sweet snack or dessert.
