Roast duck is a classic dish that combines rich, flavorful meat with a tangy and sweet sauce. When paired with orange sauce and cranberry relish, it creates a festive and delicious meal perfect for special occasions or holiday dinners.

Ingredients

  • 1 whole duck (about 5-6 pounds)
  • Salt and pepper to taste
  • 2 oranges (zested and juiced)
  • 1 cup orange marmalade
  • 1 cup cranberries (fresh or frozen)
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 cinnamon stick
  • Optional: fresh thyme or rosemary for garnish

Preparation of Roast Duck

Preheat your oven to 375°F (190°C). Season the duck generously with salt and pepper, both inside and out. Place the duck on a rack in a roasting pan, and roast for about 1.5 to 2 hours, or until the skin is crispy and the juices run clear. Baste occasionally with the pan drippings for extra flavor. Once cooked, let the duck rest for 10 minutes before carving.

Making the Orange Sauce

While the duck is resting, prepare the orange sauce. In a saucepan, combine the orange juice, zest, and marmalade. Bring to a gentle simmer over medium heat, stirring occasionally. Cook until the sauce thickens slightly, about 10 minutes. Adjust seasoning with salt and pepper if needed.

Preparing the Cranberry Relish

In a small saucepan, combine cranberries, sugar, water, and the cinnamon stick. Bring to a boil, then reduce heat and simmer until the cranberries burst and the mixture thickens, about 10-15 minutes. Remove the cinnamon stick and let the relish cool slightly. Serve chilled or at room temperature.

Serving Suggestions

Carve the roasted duck and arrange on a serving platter. Drizzle with the warm orange sauce and garnish with fresh herbs if desired. Serve alongside the cranberry relish for a colorful and flavorful contrast. This dish pairs well with roasted vegetables or a light salad.
