Seafood paella is a classic Spanish dish known for its vibrant flavors and colorful presentation. This dish combines rice with a variety of fresh seafood, creating a hearty and delicious meal perfect for special occasions or a weekend feast.

Ingredients for Seafood Paella

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 cups short-grain rice (such as Bomba or Arborio)
  • 4 cups seafood broth
  • 1 teaspoon smoked paprika
  • Pinch of saffron threads
  • 1 cup clams, cleaned
  • 1 cup shrimp, peeled and deveined
  • 1 cup mussels, cleaned
  • Salt and pepper to taste
  • Lemon wedges for serving

Preparation Steps

Start by heating the olive oil in a large, shallow skillet or paella pan over medium heat. Add the chopped onion, garlic, and red bell pepper, cooking until they soften and become fragrant. Stir in the rice and cook for a minute to toast it slightly.

Pour in the seafood broth infused with saffron and smoked paprika. Bring the mixture to a simmer, then reduce the heat to low. Allow the rice to cook uncovered for about 15 minutes, without stirring, to develop a crust on the bottom known as “socarrat.”

Once most of the liquid is absorbed, gently nestle the clams, shrimp, and mussels into the rice. Cover the pan and cook for an additional 10 minutes, or until the seafood opens and is cooked through. Discard any unopened clams or mussels.

Serving and Tips

Serve the seafood paella hot, garnished with lemon wedges. Squeeze fresh lemon juice over the top for added brightness. For best results, use high-quality saffron and fresh seafood.

Tip: Do not stir the rice during the final cooking stage to achieve the authentic socarrat. Also, you can add peas or artichokes for extra flavor and texture.
