Ingredients Needed

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 packet taco seasoning or homemade spice blend
  • 1 cup chicken broth
  • 8 small corn or flour tortillas
  • For the fresh salsa:
  • 2 medium tomatoes, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and pepper to taste

Cooking Instructions

Place the chicken breasts or thighs in the slow cooker. Sprinkle with taco seasoning and pour in the chicken broth. Cover and cook on low for 6-8 hours, or until the chicken is tender and easily shredded.
